However, many of the schools listed on this site have specific programs available for those who would like to emphasize a vegetarian or vegan cooking education within their culinary education and training.
Vegetarian cooking has begun to receive a large amount of press over the past decade. The benefits of eating vegetables and plant products as opposed to meats and processed foods has continued to grow in popularity. For this reason, many top culinary schools have begun to teach courses focused specifically on vegetarian and vegan cuisine.
Vegetarian & Vegan Philosophy
A program in vegetarian and/or vegan cooking is designed to teach meal and food preparation, kitchen management, personnel management and all other necessary culinary skills while at the same providing a philosophy of preparing original foods containing no meat or processed ingredients. These include ingredients like grains, beans and of course vegetables. Many courses also focus on specific dietary needs as well.
Many courses and programs focused on vegetarian and vegan cooking emphasize a much less rigid set of materials for students to follow than many traditional degree programs. This is because vegetarian and vegan cooking is not approached the same way as mainstream cooking. Many vegetarian cooks are chefs in small, specialty restaurants or cafes while many more are personal and private chefs. Because of this difference, the work environment can be much different than your average dining establishment. Likewise, this difference suits many vegetarian and vegan chefs just fine.
